I have used Spektrum and Hobbywing in my 1/8 models (Truck, Truggy, Buggy), but don't have a 1/8 dragster, so not sure on that. Likely there are drag specific ESC/motor combos out there, and I'd guess probably the highest ESC current and motor KV rating you can pair.
I know the Hobbywing XR8 can be had with a 2800kv motor, and for a budget setup, the Max 8 comes with a 2500 kv
Typically, RC electronics are designed to be used with certain scale RC cars/trucks in mind. So if you went with a Hobbywing Max8 combo, that should do it. But it depends on a lot of factors.
I don't know of any 1/8 scale dragsters that aren't custom built. Is yours a custom chassis? If not, what is it?
Weight will come into play, as well as your final drive ratio, rollout, pinion/spur sizes, etc. So you're going to have to give a lot more info to get a good recommendation.
And share some pics, or links to what kit/custom chassis you're building.
In my Associated DR10, I run a 100A ESC, a 3900kv motor with a 26T pinion and 78T spur, none of which are as it comes from Associated.

I for one can only guess what ESC requirements you would need and for what type of surface you would be on. Not enough information to come up with a game plan yet. I'd probably reach out to a dedicated group for the type of 1/8 scale draggin' you are doing. Rules? What are we playing with?
Possibly a 40x127mm motor in your future?
