As for your questions about 8 AA's, yes, still 2300mah. Batteries wired in series end up with the same capacity, but have a combined higher voltage.

Series is + to - to + to - to + to - to + to -...

Batteries wired in parallel creates an increases capacity. + to + to + to + and - to - to -...

2 2300Mah batteries in series will give you 2.4 volts at 2300mah.
2 2300mah batteries in parallel will give you 1.2 volts at 4600mah.

I second the notion of using the radios' tray. On the M8, the tray has a charge jack built in, so you can take it out of the radio completely to charge. No fuss, no muss, no tears shed if a cell decides to leak its' contents.

Is it safe to assume if you have a 2300mah NIMH battery you should charge at 2.3amps a 3000 mah at 3 amps etc?

i dont even charge my 5 cell 6v packs at over 1.5 amps.

anything AA i charge below 1.0 amps.
u can charge them at a higher amperage, but its going to shorten battery life and your not going to get as good of a charge

AA's don't have the surface area inside to handle large loads or large input. They have enough material inside to store a lot of energy, but they can't dump it or take it in as quick as fatter cells can. They aren't like sub-c cells or even 2/3A cells. I wouldn't go any higher than 1A for AA's.

I'm talking strictly about 7.2v stick packs or RX packs. Specifically I have 2000mah 7.2v, 3000 mah, 3600mah and 4000 mah and 1600 RX packs. Please tell me what charge I should use, I'm using the Super Brain 989.

For AA and other dry cells, I have an automatic digital charger that detects, discharges, and charges the batteries with a digital indicator, picked it up in HK, its amazing.
