So I am brand new to electric and just got an E-Maxx.

My question is how long should I charge the batteries? I have a charger that says 2800 mAh and my batteries are 3800 mAh.

Does not say just says 2800 mAh

it is a digital energy

is it just a wall plug that plugs directly into the battery? If so its probably an overnight charger but its impossible to know for sure. Somewhere on it most likely on the "brick" or "block" part of the charger it should list the chargers output. If you can't find that try and post up a pic with the model number.

i found it had to look on the bottom. it is 200 mA

That's a slow charger and will take at least over night to charge a battery. A great upgrade is a better charger.

Yup, over night charger. Look into getting a AC6 or for a few bucks more the AC680 from hobbypartz.com if you are also charging lipos or plan to go lipo at some point. They are good starting chargers. If all your charging is NiCDs or NiMHs then hop on ebay and pick up a used piranha fast charger for 6 and 7 cells packs. You can pick one up for 15-20 bucks.
