I have a Redcat volcano EPX and everything is stock on it and i was wondering if the stock ESC and stock motor would handle a 3S's as 11.1battery and what capacity i would need/?
 
Welcome to our little corner.

If this is the model, it has a switch to go from NiMH to Lipo. If you go lipo, I'm assuming it would be 2s. 2s is 7.4v and the stock NiMH is 7.2v.

You can get a better brushed system or even brushless for 3s lipo. You will need a new charger for lipo as the factory more than likely wont support it.

Battery capacity depends on the battery tray demensions.

Redcat website lists a 2s x 5800 30C as an option. It has the 4.0 banana connector that is compatible with the ESC you have now. Assuming, as Chu says, it is switchable between NiMh and LiPo. You'll need a LiPo charger-the model Redcat lists is sold out. No joy there.

This should give you a noticeable increase in run time and a bit more performance while staying within the operational parameters of the platform. And at a reasonable expense. My 2cents as a conservative type of RC'er.

2s LiPo max. Most brushless systems can handle 3s.
