No clue. Did everything the exact way I’ve done for years. Guessing just so much weight with this rack, and missed the sweet spot? Dry, and tougher than Chick Norris. I was pissed. I do pride muhseff on my ribbero’s… This rack was a tick over 4lbs. Biggest I’ve ever bought. I have always stayed between 2.5-3.2lbs..

All good man-at least I didn’t embarrass muhseff in front of guests. What sucks is the other rack I grabbed is 4lbs as well. I’ll definitely be changing my heat/cook time, and cross my fingers..
