the rc industry adopted a universal wire layout along with plug orientation years ago but 1 manufacturer always bawcked at the system (slovak-novak)
 
AFAIK all of the sensor wires do the same job just connect to different sensors inside the motors. Any brushless motor with a sensor connector should all have the same pin out. Not 100% sure what you are trying to ascertain.
 
So you're wanting to run sensored but not with a castle motor?

It's just that the motor I have does have a certain pinout and the connectors do not fit eachother so I need to cut and solder each wire individually. Therefore I need to know exactly what wire does what. For example my motor has the pinout as shown in the attached file.

I have no idea. I dont think I've ever really seen this info discussed as RC ESCs and motors all have the same interchangeability so its generally not an topic of discussion
