Last nights dessert was very international. Dutch Apple Pie and French Vanilla Ice Cream. :)
Should have also added German black forest cake and Belgian waffles.
 
No one serves this meal on real plates....no one.

Of course I breaded my catfish in cornbread batter and fried it in bacon grease....with home mix Cajun spices.
 
I like all kinds of fish, but never cared for catfish.
Lake perch filets are my favorite, but not served everywhere...
Same here. I love perch, walleye, crappies, bluegill, etc., but the texture of the catfish I've tried was kind of a turn-off. That said, I live in the Northeast so maybe I never had it prepared properly (like it would be done in the South)?

It sure looks good in those photos!
 
Corn on the bone is not yet in season here
I'm just a little north of you, so I know the local stuff is just sprouting and won't be ready for a few more months. I got these at the local grocery store that gets it from somewhere way down south, I reckon. These corn, I got today, were actually pretty good!

There's a farmers stand in Salem, NH, Peter's, that consistently sells the sweetest corn.
My wife is a corn snob, so she never even bother buying the supermarket stuff. Me, not so much.

Catfish definitely has a distinct flavor. Luckily, I like that flavor. For me, its trout, that's my least favorite, of the popular fresh water US game fish, to eat. Bluegills and crappie type panfish, are my favorite from the local waters.
However, saltwater fish is king! Top on my list(of the species I've eaten so far): opah, tuna(raw), salmon, yellow tail jack(raw), halibut, flounder, and haddock. Not a fan of the very popular swordfish.

I get to enjoy my favorite freshwater fish fresh-out-of-the-water as I enjoy fishing (particularly fly fishing). As for saltwater fish, I've most recently enjoyed Striped bass I caught on Cape Cod. Although I've fly fished for them each Spring for the past 31 years, I've only ever kept one fish to eat; it's been a purely catch-and-release activity otherwise.

But my all-time favorite salt water fish was Dolphin (Mahi Mahi) fresh out of the water in Loreto, Mexico. I went on a salt water fly fishing trip there many years ago with a group of friends from the Cape Cod fly fishing gang.

Each day, we tasked one or two guys with keeping a fish or two. When we came in, we'd drop off those fish at a local restaurant; a different one each time. The chef would prepare them for dinner for us that evening. And, each evening, at each restaurant, I'd say the same thing,
"Wow! That was the best fish I ever had!"

It was a culinary delight! One famous chef even came outside to pose for a photo with us... (I'm on the far left of the photo).
