I get to enjoy my favorite freshwater fish fresh-out-of-the-water as I enjoy fishing (particularly fly fishing). As for saltwater fish, I've most recently enjoyed Striped bass I caught on Cape Cod. Although I've fly fished for them each Spring for the past 31 years, I've only ever kept one fish to eat; it's been a purely catch-and-release activity otherwise.

But my all-time favorite salt water fish was Dolphin (Mahi Mahi) fresh out of the water in Loreto, Mexico. I went on a salt water fly fishing trip there many years ago with a group of friends from the Cape Cod fly fishing gang.

Each day, we tasked one or two guys with keeping a fish or two. When we came in, we'd drop off those fish at a local restaurant; a different one each time. The chef would prepare them for dinner for us that evening. And, each evening, at each restaurant, I'd say the same thing,
"Wow! That was the best fish I ever had!"

It was a culinary delight! One famous chef even came outside to pose for a photo with us... (I'm on the far left of the photo).

I haven't done much fishing the past several years. I would catch and release most, but keep a few every year. Fresh bass on the grill is always good with me. A lot of the places for fly fishing were c&r only anyway. Still have my favorite, the Sage 389 light line. Beautiful rod, but needs a perfect day or that 3 weight line does what it wants with too much wind.
 
I've tried fly fishing a few times, I just don't have the patience to learn to do it well enough. I'm just going to keep it simple and enjoy my time on the water with ultra light spinning gear.
 
Years ago (80's) Guys at work laughed at me spending $1,000 on a RC race buggy.
Until they found out the service manager had a $1,500 fly rod/reel! :eek:

It's been proven good! We have a chain of convenience stores here in upstate New York, Stewarts Shops, which have these in a basket on the counter. Plain w/butter, w/PB, or with PB&J. I'd like to know how many I've put down the hatch over the years...
 
I hate pb&j unless I'm really...really in the right place........
I go through "phases" - for a while I was on a "grilled fried bologna and cheese sandwich" bender, now still working through my "Toaster-oven" Ribs phase....

I did "Country Ribs" on Sunday (450 uncovered for 20 minutes, then 230F covered for three hours) and still cooked them too long. I couldn't believe the amount of juices in the pan after that initial 450F - that should have been my first "clue"? This time added Carrots to the Mac and threw an onion in with the ribs (it was perfect). It was still "good" but not "great" - I'm going to have to try again next week?... :D
