As with the Double Stuf Oreos dunked in iced tea so goes the chocolate chip cookies. What can I say, I follow a different drummer 🤣.

We were overdue for a rack of Riberro’s, and of course I had to do Southern style Black eyed pea’s for New Years Day.. 😎

That BPE side is intriguing me.
 
Strong, as in flavor and/or structure?
Actually both. Until now, all my succesfully caramelized loaves required a very high dough hydration, but the texture here reminds me more of a cake. I like the very dark look as well. Teff flour tastes somewhat caramelly by itself but now the taste is indeed much stronger. It pairs very good with caramel sauce lol

It’s a tradition on NYD to have Black Eyed Peas in the south.. Only reason they were there lol… I almost always do corn with my ribs.. They were the best I’ve had though this year, and I got a second helping-the same size as the first.. 😎

What did you use for the meat base?
 
Worked a 16hr OT shift, yesterday, and slept in this morning. Got up around 10:30am and cleaned up the light snow fall during the overnight. After that, it was time for brunch: half a rack of leftover baby back, bagel, and coffee. A single sugar cookie for dessert.
