Susan made chicken enchilada casserole last night for dinner.
That is one of the wife's favorite's, need to add it to next weeks menu! :)
 
Dinner tonight.......X-burger!
...beef/pork patty, bacon, fried egg, pepper jack cheese, lettuce, tomato, raw onions.
Store didn't have any ripen avocado though, otherwise, it would have been included.
The buns couldn't contain all this yumminess, so it became extremely messy. It's not a great burger unless your hands are covered in grease, sauce, and yolk!

I just had a couple small cheeseburgers today. I made a chiliburger with Monterey Jack and chili cheese chips, and a regular one with just ketchup, mustard, onion, and pickle.

I was just thinking how the heck you got that picture of me, but then I noticed the blue eyes 😁
I thought he looked like he just ate that cheeseburger you made lol.
 
Dinner tonight was beef and pork fajitas with Spanish rice and pasta.
Dessert was Tillamook malted moo shake.

The wife and I busted out the grill last night. Filet mignon, baked potato, and broccoli. Tried a new marinade for the steaks, it was a grand slam home run. Ill be using that from now on.

It's funny that while Americans prefer tender cuts of meat, my old school Vietnamese peeps prefer a bit of chewiness. I remember when I was a kid, they would say that the chicken here are much too tender.
Somewhat carrying on that tradition, chewy cuts of beef doesn't really bother me. I've recently discovered my new favorite cut of beef steak: top blade. Top blade is tender and very flavorful, but there are a lot of connective tissues running through it. Which I actually really like, but most Americans don't. More for me! Also, this cut is only $5/lb!

Homegrown chickens aren't like store bought chickens. My dad butchered a bunch of our roosters when I was a kid, and they were a lot tougher meat. But they spent their life fighting off neighborhood stray dogs too lol.

Farm chickens have been selectively bred for decades to have that tender texture we've come to know. Same with cattle. The meat has a higher fat content. This is why farm meat are much unhealthier than wild game meat. This is why wild games are super lean.
Then there's the living the simple life on a farm, where the animals aren't constantly running and fighting for survival. Thus keeping the muscles soft.

Thats just like Filipinos love fatty meat. In fact my wife will just eat the straight up fat that I cut off of any piece of meat. Americans generally prefer lean meat.

Well, not really. They prefer not to eat the actual fat tissue, but they still prefer the high fatty cuts of meat such as ribeye. Of course, we all know that fried chicken skin is the bomb!
