Whatcha Eating?

I started cooking the Beef-Combo Enchiladas too late last night, took them out of the Toaster Oven at 2300 CDT, fell asleep while waiting for them to rest. Had "Supper" at 0345 this morning?...

Large Skillet, brown GB (1), add diced Stew Meat (2) and onion (3), reduce. Add Beans (4), reduce. Add "Hot Sauce" (5), reduce. Stir in half the Cheese (6), let cool (S&P/spice to taste). ln a small skillet, warm Corn Tortillas (7) on both sides, roll with filling, into pan. Pour "Mild Sauce" (8) over the casserole, them more Cheese (9). Bake 350F for a half hour.

Tonight was Spaghetti and Garlic Bread.

salty garlic cheese. We'll be going on holiday this friday so I can let it age in the fridge for three weeks.

sourdough crackers I'll bake tomorrow morning to take to the mountains when we're hiking. The sourdough starter exploded lol it was pushing the paper I covered it with but I froze it now.

Tried Mama Cozzi's pizzas from Aldi's, tonight. Pretty darn good! $8 for a 16" very well topped tasty pizza is a great value! Will putting these pizzas on dinner rotation.
We had a few mushrooms left, so I added it to the pies.

Trying a new to me Japanese restaurant for lunch today. I'm having the Chef's Special Roll. Avacado, Mango, and Ginger sushi with Salmon drizzled with a cherry sauce. Mango Mochi ice cream for dessert. It was oishii - delicious. Next door is a chocolate shop, oh my word.

Looks slightly undercooked to me, but it's still icky sea food!
