Peri Peri chicken breast, honey glazed, with sweet tangy leaves, baby plum tomatoes and chilli. Random leftover green beans didn't look out of place, so I added those too! 😝

More chicken? Erm, yes. I'm clearly a 1 trick pony. Time for something different next meal time.

Just baked a loaf, from Matthew's Cotswold Strong Flour.

I used a flour improver - well known and made in Carmarthen. I used 2% of flour weight.

This loaf was light, fluffy, perfect texture without being too dense or claggy. Absolutely spot on - very impressed with it.

Allinson's fast acting yeast.

450g Matthew's Cotswold Strong Bread Flour

280 ml tepid water

2 tbsp olive oil

1 tspn salt

1 tbsp sugar

1 small plastic spoon of yeast + 1 tspn (plastic spoon = 2 tspn, so total yeast = 3 tspn)

9g flour improver.

This loaf is so much better than anything I've bought from the shops lately. 🤩👍

Once you've got the ingredients, you can produce 3 500g, light fluffy loaves from one 1.5kg bag of flour.

Cost - £1 per loaf, based on using the finest quality strong bread flour. Using cheaper flour, I could have produced a similar loaf for about £0.50p.

I love banana leather! I went through a fruit drying phase when the kids were really young. One of the local supermarkets, would regularly have older bananas on clearance, and I would take advantage of these cheapies to make banana leather. I'm sure I'll break out my old Excalibur again, one of these days.

Today is OT Saturday. First time making sausage egg McMuffins at work. Made 4 poached eggs in the microwave using water and a large mug. Also brought in 2 frozen pork sausages patties; American cheese; English muffins; avocado. I would say, it turned out better than McDonald's! This will now be on the regular work meal rotation.

....and shredded Wheat with milk for dessert.

Not edible - but here are some new tools - an 11" and 8" Chefology skillets. 🤩

These are ceramic non-stick, free of PFOA/PFAS/PTFE, stainless steel construction with aluminium base.

Sadly I had to retire 1 of my (very expensive) Fissler frying pans after 12 years, so it will be interesting to see how these hold up. 🤞

Those look like Hexclad. Never heard of that brand.
