The jerking is normal. There's a secondary clutch in the transmission that helps people avoid throwing it into reverse when the rpm's are high. As you increase throttle, the pawls come out and engage, dramatically.
If you don't care about reverse, install a forward only conversion, then it will take off smoothly. It increases the strength of the transmission as the FOC output gears are twice as wide as the stock gears, which are narrower to allow room for the forward/reverse mechanism. It also removes a decent amount of rotating mass out of the trans which makes it a bit more responsive.
