the engine is tuning its sellf

hi people I've spent hours trying to tune my 28. engine iv had it running fine for like 7 times but when its going good it soundingly dies puts out etc its all most like its tuning its self type thing so i need some help:\:\:\:\

Are you getting good take off and good WOT? What temp reads are you getting?

um dont now temp but i put a bit of spit on the head and it just stays there dosent sizzle off. i mean I've never seen a engine play up so much when i have races i tune some people engines for the weather conditions but this thing has a mind of its own. i start it fine then i give it gas goes grate but then i stop and then it shuts off and dosent start again and thats what annoys me is it the low end needle i need to play with or not :\:\:\
