What is the largest pinion gear you can get for a 3mm shaft? I want an assortment for my sidewinder 3800kv that is going in my slash.

The largest pinion you can get, and the largest pinion you can safely run (due to overheating the motor / ESC) will most likely be two different things. What size spur are you running?

So far just the 3 that came with the center diff.

Alright, then I'd start with 14/52 and tune from there based on temp readings.
