This is my Banana and kiwi layered cake.


Start with a spunge cake base. and give it a thin coat of custard.

Add sliced kiwi

Macaroons go on top.

Sprinkle the macaroons with plenty of vanilla liqueur. In this case Galiano. You can substitute for a good port or some marsala.

Add another cake base. But coat the inside with a layer of custard and
whipped cream in a 50/50 mix. Just enough to make the layers stick together and keep it moist.

Again cover the topside of the cake with a thin coating of custard, and add sliced banana. It should be ripe, but not over the top. It needs to still be fresh and not overly sweet on flavor.

Cover the bananas with a thick layer of 50/50 custard whipped cream mix. About half an inch should do it.

Last step is Marcipan, I bought a premade lid making it easy. If you can't get it pre rolled, I'd suggest putting the marcipan between to pieces of cling film for rolling.
If the bananas used are to sweet, this cake will get to sweet very quick.
