First I would recalibrate the esc. After if it still does the same thing,

check the motor wires, make sure they are all in good condition.
Clicks and judders, most likely the motor is cogging very bad. Could be something in the motor like a bearing. Is this a new motor/new car or has it been used/abused?
 
As David said, try recalibrating. This is a snippet from the Carnage manual on how to calibrate the ESC.

Does the drivetrain move freely? Try rotating the spur gear and see if you feel any resistance.
