hello! i have a little bit stupid question because I'm scare to burn out another esc
Can i run my Hobbywing 8bl150 with the 4268 2150kv motor with max voltage is 21v and max amps is 116A
and can i run it in 3s,4s,5s,6s lipo or it just run in 3s,4s,6s lipo

Well a fully charged 6s is 25.2V so I think the motor is only good for 5s. It might survive or it might not. The ESC should be fine though.

Yes as long as the cells in the lipos are the same (same brand & capacity).

Some escs don't detect 5s lipos for the LVC properly so if it doesn't beep 5 times when you turn it on you might have to program it to 5s lipo.

Yes

Theres one important thing..we use different Lithium batteries some are Lihv-4.35 volts a cell lipo- 4.2 volts a cell and others 3.65 volts a cell(not used by many).just make sure you dont exceed that 21 volt mark

If you're going to run 2 batteries in series then they need to be identical batteries and they should be a matched set. I would not run two mis-matched batteries in series.
