Most radios (including the HiTec Ranger series) have servo reversing built into them. I looked at the radio in question at HiTec's site and couldn't make out exactly where the reversing switch is, but there should be one for the throttle and one for the steering. Flip the one for the throttle and you should be good to go.
If you have more problems, it may have something to do with the failsafe device you have installed. Some of them don't work well with certain radios.
As for the jittery servo action, that is almost certainly an issue with the failsafe. There are a number of things that can cause a servo to glitch (the jitters that you see are known as glitching). One big culprit is a failsafe device that is not properly set up. Some others include external interference, vibrating metal-to-metal contacts, bad wiring, loose connectors, etc.
