I am getting all these little Arrma groms with non standard connectors to the ESC. I don't like using the stock electronics. I rather use my own ESC a receiver. The issue i am running into is the motor uses this weird connector. The ESC i use have Bullet connectors. I'd rather use Brushed since it's my and my 6 year old using these things around the house.

I am ususlly using this ESC

I'm not rookie to soldering. I'd like to unsolder the old wires and solder on new ones with bullet connectors.
 
You can solder on whatever connectors you want. I'm not really seeing a question in your post 🤔

With brushed motors, I have always direct soldered from ESC to motor tabs, there really is no purpose for connectors between the ESC and motor, especially if you have soldering skills ;)

I used to run the same ESC and was able to install a cooling fan on both the esc and brushed motor:
