Can I bind any remote to any kind of esc?
 
You bind it to the receiver not the esc and I think you can. I remember binding an aftermarket transmitter to my rustler I used to have.
 
The receiver has to be compatible with the transmitter you are trying to bind it to.
Ok I got it. The esc only feeds the receiver with power. As long as I get a controller and receiver combo I can use any motor ESC combo I won't.

Yeah basically. The ESC powers the RX (receiver) and your servo(s) through the positive and negative wires in teh 3 wire leads, but the RX tells the ESC and the servo what to do via the signal wire which is the 3rd wire in the 3 wire lead. Then of course the ESC feeds and controls the motor itself. You are correct though that if you have a stand alone TX (transmitter/controller) and RX then you can run any ESC/Motor combo you want.
