Beginner never flown an Aero but bought Eflite BindandFly Viper 90mm

Hello, I've never flown an aircraft before and yes i bought the Viper 90mm...I will have an instructor for my maiden flight.
I got the Spektrum NX8+ and i have a few questions please

1. For me..coming for RC Onroad since 1980s..it is more natural for me to have the right gimbal stick Up for getting the Nose up instead of following the elevators like a real plane stick..So throttle up I would like to follow right stick plane up..i do not want to forget when I go throttle up and accidently right gimbal stick up and the plane goes down...the question is..Do I change the setting on system setting on the transmitter on Servo Set up BEFORE binding or after? Because dont i have to rebind again if I do this?

2. For the receiver...I'm able to go to gyro heading hold and Gains settings with Safe Mode on or the Locked receiver I wont be able to?

3. Flight Mode...what would you suggest for flight modes? mind you i am just doing this for pleasure not to show off or flex..I would like to have a smooth assisted flying during my few weeks of training..

Flight Mode 1 full Safe Mode?

Flight Mode 2 Safe Envelope?

Flight Mode Three?

And how about flap setting for 3 position switch? I want flap setting for landings...one position for low and slow so that i do not pull back on the throttle too much..meaning I want gyro assisted landing to keep the plane level..suggestion on settings?

Another flap setting is for landing di windy condition...suggestion?

So basically I want to fly the jet smooth and assisted...there are just so many setting to choose from.

Also..can i change the switch to be ABCDEFGH from left to right?

Servo throw setting....The travel do I set to 150 or 100? I read that I should not increase or decrease from the transmitter..I will be using Accuthrow and use the pushrods to adjust the travel as per the manual

Welcome to the hobby! I myself moved from surface RC's to planes a few years ago. My first EDF was a Habu 50mm, still flies with a few repairs.

There is a LOT of ominous foreshadowing in that sentence.
If it were a motorcycle, that plane would a "liter bike", it'll get away from you quickly, don't let SAFE lure you into a sense of security, the plane is still very crash-able.

I would recommend getting a simulator to practice with, you can get dozens of crashes "out of the way." A dongle to connect your current transmitter to your computer is a lot cheaper than a plane and PhoenixRC is freeware.

To protect your $500+ investment you may want to grab something like a BNF Aeroscout to fly first, or maybe a Habu, it'll work with the NX8 you already have.

For the elevator/pitch setting, just reverse that channel, (typically channel 2) in settings, binding shouldn't matter. That's a highly unusual decision but it's up to you. Your instructor will likely insist on having it set "conventionally" if they're flying it and encourage you to do the same.

Whenever I play a game I have to have stick up = look up, I can't stand inverted Y controls (especially on mouse) so I see where you're coming from.

My progression was something like 4-5 hours on the simulator, ~10 or so flights with the Aeroscout in SAFE mode, another 10 flights without, and after than I was tentatively flying the Habu - it's still the most challenging plane in my collection.

I have flown once before. It was only for a second. Then, even tho I was flapping my arms REAL fast, I hit the ground like it owed me money. A lot! 🤣

Ok, seriously, I'm a vintage buggy fan mostly. By what I'm gathering, you picked out the fastest, hardest jet to learn on? 🤔
