Reviving this with today's brunch. I had a craving last night, so I made healthy banana bread. So today, I turned that into banana bread french toast, with a side of thick cut apple wood bacon.

Me too Lloyd! I used olive oil rather than butter, and cut the sugar about 25% from the recipe. Delicious to me, but if you expect store bought candy sweet banana bread you may not like it.
