What gives you the idea that all of it is raw? It's a common misconception. The word sushi just means vinegared rice, nothing to do with anything served raw.

Yeah, I have yet to get up the courage to try anything raw. Maybe if there was an ocean near me. But until the US from the Mississippi westward falls into the abyss, I think I'll pass on trying any raw seafood. All the sushi I have tried has been tempura shrimp, veggies, or immitation crab. It's all been pretty good. Just too expensive for what's in it.

But my local Kroger is now making it fresh daily, and it's about as good as I've tried.

Flash frozen to a certain temp for some time actually is good.

Yeah, I hear frozen shrimp and scallops really take very little damage from freezing. But I've never had really fresh versions of either to see for myself, so 🤷‍♂️
