I love this time of year, right when it starts to get a cold outside - perfect time to crank up the stove and start cooking some chili. Exactly what I'll be doing this weekend.

Anyone else eat peanut butter sandwiches with their chili?
 
I've never liked peanut butter, hate how it sticks to the inside of my mouth. I'll eat a good chili any day, love the stuff. Might be good for the sinus infection I'm laboring under right now.
 
That sounds like a pretty odd combo Woodie but might have to try it out. You guys should post your chili recipes.
 
here is my chilli recipe.

she can cook some dang good chilli!! cooks some good gumbo to!

She is pretty smart and nice to look at, so i think I'm going to keep her around. :D
 
Can opener is all I need. LOL
 
Nothing special here, but it's the way I've always made it:


  • 2 lbs hamburger
  • 2 packs of Chili seasoning mix
  • 2 cans Diced tomatoes w/ green chilies (mild (or mix one mild and one hot))
  • 2 cans Chili beans (mix one mild and one hot)
  • 1 small yellow onion
Brown hamburger and mix in half of yellow onion. Once browned I then drain the grease and then place the hamburger and all other items into pot, then take the two bean cans and fill with hot water and also pour into the pot and let cook for a few hours stirring occasionally.

I also put in chili powder, black pepper, and garlic powder but I don't have any measured amount just by taste.

Once cooked I take 4-5 pieces of bread and spread peanut butter of them and fold in half... enjoy!

BTW - I'll be eating in just a few hours :D

Pretty wild that my family uses just about the same recipe Woodie. Minus the peanut butter sandwiches.:) Do you dip the sandwiches in the chilli, or kinda chase one another?
 
I use them to dip into the chili - oh man it's good.

we use chili meat instead of hamburger. not sure what else she uses. I just stay out of her way.
 
Hey WoodiE, you should try it with 1lb of sausage and 1lb pound of hamburger instead of 2lbs hamburger, it gives it a different flavor. Also I add in a small green pepper. We just had chili last week I could go for some more this week.

Not heard of chili meat, I assume it has spices etc already mixed in? My hamburger comes from my parents farm raised cows, you won't find hamburger like this at your local krogers for sure. :D


Hey WoodiE, you should try it with 1lb of sausage and 1lb pound of hamburger instead of 2lbs hamburger, it gives it a different flavor. Also I add in a small green pepper. We just had chili last week I could go for some more this week.

I've not tried sausage, but have tried steak and hamburger. It was good but I think the steak needed to be better cooked, too chewy. I'll give sausage a try though, any certain kind in particular?
 
chili meat is hamburger, just cut different. It doesn't have any seasoning or anything, just a different texture.

Just like you can get stew meat, you can get chili meat.
 
Just made some chili last night. I do use bagged chili seasoning, but usually kick it up a bit with about a teaspoon of Cayenne pepper and a few healthy shots of Tabasco.

And even though I was born, raised and still live in Upstate New York, I love to eat my chili with cornbread....
 
Hands down the best chili you will ever eat guaranteed!!!!!

3 tablespoons olive oil
6 pounds beef brisket, cut into 1 inch cubes
2 pounds premium pork sausage, with sage
2 large onions, chopped fine
3 cups strong coffee
6 garlic cloves, minced
28 ounce can diced tomatoes
1 dried ancho pepper, seeded & chopped fine
3 beef bouillon cubes
8 ounce can chipotle chiles in adobo, chopped fine
2 bittersweet chocolate square
2 7 ounce cans salsa verde
2 12 ounce bottles Mexican beer
1 fluid ounce tequila
juice of 1 lime
1 tablespoon brown sugar
1 tablespoon salt
1 teaspoon black pepper
3 tablespoons liquid smoke
6 tablespoons chili powder
6 tablespoons ground cumin
8 green onions, sliced, for garnish
2 cups shredded Mexican blend cheese, for garnish

Heat olive oil in large cast iron pot on high. When oil is hot, add cubed beef and cook until browned, stirring occasionally. When beef is browned, remove from pot and set aside. Drain any liquid from the pot. Return pot to stove and, on medium-high heat, cook the pork sausage and chopped onions until sausage is cooked and onions are translucent. At this point, return the cubed beef to the pot along with all the remaining ingredients. 5Stir well, cover and simmer on low to medium-low for 3 to 4 hours stirring occasionally, until beef brisket is tender and chili has thickened.

Ladle into bowls and garnish with shredded cheese blend and green onions.
