I have a MN78 rc, I recently drove it thru a puddle and it stopped working, replaced motor and esc/receiver but it won't connect now, lights on car and transmitter flashing rapidly but won't bind.

A few things to check...
Be POSITIVE that your battery is fully charged.
Check your connections. Be sure nothing is loose.
Be positive that your servo and esc are plugged in correctly. A # of brands plugs can be installed 180° and cause your issue.
Try unplugging your steering servo completely. Your servo might be wet and causing this issue too.
Make sure your car is supported so it can't drive away without steering!!!

I tried that, didn't change anything, I have new batteries in remote and car. The plugs in this model are one way and can not be switched. The light on the controller flashes very fast. I have a another mn78 and it's controller flashes slowly and connects in a matter of seconds. I have tried many combinations on turning car/remote on and hitting the bind button, but to no avail. I do a lot with rc cars but this is new to me...
 
Try disconnecting your servo and rebind. If it works, your servo might be bad.
Servo disconnected, I'm not sure how to bind for this rc, idk if I have to hold it, turn car/remote on at same time, click twice, 3 times? There is literally 0 info on the web. I've tried various combos, nothing working so far

Oh wait, I think i unlocked the code, it's syncing
 
I have steering now, throttle is working but very glitch, accelerating and decelerating without me touching controler
 
It works like normal now, hold down bind button, and turn car and remote on at same time for like 10 seconds.
Any time you rebind a radio to a receiver, you have to calibrate the throttle to the ESC. That usually involves turning the radio on, then turn the truck on while holding the bind button on the ESC. Then you press the bind button with the trigger at neutral. After that pull and hold the trigger for forward and press the bind button again, then push full reverse and hold and press the bind button again. This calibrates most ESC's. No idea if this works on the MN.

I went to download the manual for it to see if I could work my way through what I know will be full blown Chingrish, but in a first in my over 40 years experience with RC, you have to PAY for the manual!
 
So I'm having issues again, I put it away for a few days and after attempting to drive it today, it would not connect, I did everything I did last time and now it is not co operating. It seems to have "forgotten " the controller
