So I fully charged two Li-Po batteries with the intention of taking my slash to a fun bash spot. That never ended up happening and they have sat now fully changed for 7 days. Did I possibly damage them?

They are probably not damaged but you could have possibly lowered your capacity slightly over the long run. Definetly not a good idea to make this a habit but you should be ok. Do you have a charger with storage discharge capability? I am constantly charging too many batteries and dont end up using them for some reason, usually weather and need to discharge to storage capacity when not used.
