The size of the track will be about 80x100' give or take. I have a basic track
layout that will let me change it up easily . But I need help laying out the jumps. Any help would be great look at attachment.:)

In my opinion, a big factor is what rigs will you be racing on this track? Also how will you be making the jumps? Do you have a loader?

If alot of monster trucks will be running, then going very technical wont be a good idea. But if alot of buggy's and short course stuff will be ran, then Id make it pretty technical. Some doubles and tripples that could be doubles while using the back of the triples landing as a take off, so the guy who triple gets slowed up a bit by having to roll over the double landing...if that makes sense.

If you will be running mainly monster trucks and big lanky rigs like that, then just some jumps to flat and maybe a double here and there with some whoops or something would be good.

I would take the S turn out of the bottom and let the track follow the outsides of your layout. That would allow for 4 straightaways with 90 degree turns once you're out of the technical part.
It makes for some all out speed and good drifting turns.
