As far as the engine life, you are probably looking at about 6-8 gallons, provided you don't overheat the engine, or hammer it too hard. Just take good care of your truck and it will do you fine.
You'll know when it's time to rebuild the engine, It'll be really hard to start, lose compression, and will cut off when it gets warm.
The break in period should be around 6-8 tanks, so you should be good to go ahead and lean it out. 1 gallon is WAY too long for break in. If you did it all at once, it should have taken you around 3-4 hours.
Search the forum about the heat cycle method, that's what I do and it works well for me.
