What does the 20c, 30c 50c ect mean in the Lipo rating?

Also the difference is negligible in slower motors that don't draw much current such as 17.5 or 21 turn for example...if you are sporting a 5 turn or something oh yeah you'll notice.

The discharge numbers are meaningless by itself. You need the mah number to make use of the power figures.
Different manufacturers use different tests to get the C number, which means one persons 20C is another persons 40C and vice versa.
There is no standard test for the claimed ratings.
 
to figure out the output this is what you do

C * (mah / 1000) = amperage

examples

3s 40c 5000mah = 40 * 5000 / 1000 = 200 amps

2s 50C 6500 mah = 50 * 6500 / 1000 = 325 amps

3s 50C 6500 mah = 50 * 6500 / 1000 = 325 amps
