Dino nuggies! Breydon used to love those. Now he likes the Country Pride brand. Only Kroger here has them.

Breaky today started with me remembering my dad. He used to make this with toast and leftover sausage gravy after the biscuits were gone. He called it "💩 on a Shingle" 😜

He grew up in the sticks. No electricity, no running water. They were very poor. So he said this was as good as it got sometimes. It is really good though.

Hunny I’m from a town in NC where the nearest gas station was 45 miles away ^^^ this is life better then gold lol n I scratch make all of it

I grew up in Indiana, but my family is all from Arkansas, Kentucky, etc. My gramma on my mom's side grew up picking cotton in the early 1900's in Arkansas. She could cook a shoe and rival anything Gordon Ramsay makes. My gramma on my dad's side never, ever shopped in a grocery store. All home grown, scratch made vittles. So I grew up learning how to grow veggies, take care of rabbits, chickens, etc, and I learned to cook with the best of them. I was making donuts from scratch at 8 years old. I still have my gramma's cast iron skillet that I cooked my very first meal in when I was like 10.

Just in the last few months I have learned to make breads, pizza dough, etc. I try to learn at least one new dish a month. I love to cook, I just wish my body was still able to stand in the kitchen like I used to. It is challenging anymore. Wait till you see the upcoming enchiladas I am going to make. They are phenominal 😋

Poor? Man, when I was growing up, we only had sticks and rocks for breakfast.

I’m currently getting my kitchen back to par and sometimes I’m so grateful for learning the good ol ways other times I’m greatful for my “gadgets “ if you wil but always scratch made or my own weird versions of said dishes n being southern and Italian oh it can be interesting but enchiladas now I’m jealous I can’t make them to save anyone’s lives lol

They aren't hard to make, just a bit time consuming, and requires white wine and lobster base, which are a couple things I don't normally have on hand. But here's the recipe...

It says you can use 1 cup of cooking sherry in place of the wine, but sherry is basically salt, so if you try this with sherry, cut that to 1/2 cup instead, and use unsalted butter.

But this is so so good, unless you're @Doom! 😜 Especially if you bake the enchiladas on a plate with refried beans covered in monterey jack cheese, then add a side of Chi Chi's corn cake. I always toss a little lettuce, tomato, and sour cream salad on there too. That's the way it was served in the restaurant, aside from the salad. One of my favorite meals ever though.

That recipe is authentic Chi Chi's. The author says he worked there 16 years. And I have seen comments by other former employees that verified it. While it may not be an authentic Mexican dish, they are very, very good.

I just doubled the recipe and made the sauce. That's the hardest part for me. It took me an hour, and I can't stand that long without being in a lot of pain. So when I go through the trouble of making it, I make a lot.

Once you get the shrimp and crab meat mixed in, you can cool it and the leftover sauce and freeze it in ziplock bags, and warm it up later in the bag in a saucepan of boiling water, just like chicken ala king 😉 Then all you have to do it put it in the tortillas, cover with sauce, and bake. Makes for a quick and easy dinner.

Better than Bouillon makes a good lobster base (Amazon link, but you can buy cheaper in stores if you can find it), and for the tortillas I only use Mission brand or La Banderita flour tortillas. Amazon has a really cheap white cooking wine that is very good in this recipe here.

Baking the corn cakes now. After that is done the enchiladas and refried beans go in the oven. I'll keep ya posted. So looking forward to this...😋😋😋😉

To be honest, I should have made one enchilada lol. I was so stuffed I passed out. But that was the way Chi Chi's served them. I made just one for breaky, and that was more than enough with the sides. Think I will be eating a salad for lunch to offset my gluttony 😜

It's a very versatile appliance. Every toaster and toaster oven should be replaced with an air fryer.
