RC Driving Style
I've been hearing that if you let off the gas-throttle-w/e you call it when your jumping your RC car that you can break your differential. Is this true?

I've personally never heard that, and if you want to control how you are going to land, you have to be able to throttle/brake in mid-air.

no. staying on the throttle when you land puts a ton of shock load on the drive-train.
