Someplace around 250 deg F is a good safe place to be. But temperature isnt everything. The motor should run clean and crisp with no bogging or loss of power. In my experiance my Traxxas motors liked to run a little hotter, in the 270 deg F range, when they were running at their best.
What engine? The original TRX .15s run best around 300*, the later 2.5/2.5R are good in the 270* range as stated above.
