I'm thinking by stopping, he means the engine dies, right? Sounds to me you have two issues here.
One, when applying the brakes and the engine dies, sounds to me the idle set screw is backed out too far, allowing the carn to close completely. You need to set this screw so that, when you apply the brake, you maintain about a 1 mm opening for the carb. Easiest way to do this is, pull the air filter off and look down the throat of the carb. Turn the RX and TX on. Carb should be open just about 1 mm now. Now, give it brake. If the carb closes, you need to turn the idle screw clock wise. Open the throttle (i.e.give it gas), turn the idel screw a time or two, then give it brake. Repeat this process until you maintain a 1 mm opening in the carb when applying the brake.
As for it jumping from brake to WOT, could be two immediate things. One, the trim on your throttle channel is cranked too high or two, you need to center your servo. If it's the trim, just crank it down. Ideally, you want your trim as close to "0" as possible, that way you have the room to make adjustments throughout the day. If the servo needs centered, that's easy to. Turn on the RX and TX and make sure the trims are set to "0" or neutral. Now, pull the servo horns off then reattach them as they should be (check your manual on how they should look with no input and 0 trim). Screw them back on and you should be set! I typically center my servos every couple of outings, but that's just me!
