Why does a nitro go full throttle when out of range of the transmitter? This just seems stupid to me, why wouldn't it just shut down? Does anyone know?
Also how far should a regular nitro go before this happens? 100ft 200ft ???

Because the servo cannot program itself to go back to neutral without the transmitter, and without the transmitter it'll stay at it's position. This is why you need a fail-safe.

Some say range can be upwards of a quarter mile, but I would never even think about trying it.
As coby said, once the rx loses signal, it pretty much locks the servos to wherever they are. Usually that's WOT. And as he said, the very best thing you can do is to make sure you have an appropriately programmed failsafe on the throttle channel. That way, when the rx loses signal, it will return the throttle servo to a pre-programmed setting, usually full-brake.
Also, consider a throttle return spring. This is a spring attached to the carb slide which will mechanically pull the throttle closed in the event that the batteries in the truck die or are disconnected.
