Will the proline big joe 40 series slow down my mammoth?
does it do well in dirt, grass and on the streed?

Well I had them and you need to take in consideration that they are bulkier than the standard 40 series. They work well on grass and street but I think you will need to re-gear your center diff and your clutchbell.

The XTM Mammoth has the standard 24-7 right? It is fast out of the box already. I would give it a try first and see how you like it. I put some bow ties on one and it was pretty squirrley. You want to try and keep the gear ratio low for snappy responses. Never played with the gearing the Mammoth so I can't tell ya certain one.
