Ok so I was wondering what prop I should get and what the motor will handle it's on a 27" vee and I would like to go faster it has the factory recommended prop on it now

You've got a large selection to choose from. From Octura, anything from an X-437 to X-640 will do as anything over 40mm will not fit under the cavitation plate. A Prather 215 is also a great prop.
The X series range from those and in between are the 637, 438 and 440.

I could always cut the plate off the plate and relocate the waterpickup

No, don't do that. The props that I listed above are quite adequate for the boat.
Oh, there is also an X-640 or if you want a custom-made prop, Mark Sholund at Props-4-U has a highly reworked 1440.
