I don't know much about brushless motors, is there much difference between the two?
I'm looking to get either a Novak sensored system or a Castle Creations Mamba Max sensorless?
Which one should I get for my on-road car?

Sensored motors are not jumpy at low RPM and if you have a decent esc you can boost and turbo boost them for more performance.

Sensorless motors are jumpy at lower RPMs they can have timing advance but nothing similar to a sensored motor. sensorless are generally cheaper and might have a longer life span due to less timing advance, but if your racing you going to want ever bit of performance you can get.

Down to personal preference, I just started using senored and I am loving them.
 
OK, I'll buy a sensored then, are all sensorless, jumpy and unreliable at low speeds, and what sensored system would you recommend?
 
I use sensorless brushless systems on everything but my Mini Rock Crawler. If you're not in competition, a sensored setup isn't really necessary IMHO.
