1 good servo IMO. The stockers are only 80 in/oz ea. You can get one good servo like what you mentioned that's faster, more torque and will definitely handle better. Besides that it sheds some weight. I went with a JR z650m and noticed a HUGE improvement over two stockers.
 
I would also have to say the single high speed high torqe is the way to go
 
Revo Servo

A lot of us are using the Airtronics 94359Z ERG-VB Hi-Speed/Hi-Torque 200 oz/in servo it is 200oz of torque with a .10 transit time. I use a proline single servo arm along with it and it works great....
 
go with one digital, you would be a lot quicker and prolly have more torque too plus metal gears, and the digital would make that cool sound that digital servos make lol
