I am proud to say that I am going to try both of those recipes this weekend. I cannot wait. A whole weekend on the grill. Thanks guys!

Eddy or anyone, one question, how do you keep the fish from sticking to the grill, and when it is done without over cooking, how do you keep it from falling apart when you take if off. Do you sear it to get that nice grill mark and to seal the flavor?

You can use a BBQ Basket like this one but made for fish.

I totally forgot about that thing. I have one and never used it. As you can see, I hardly cook fish on my grill. I whole week to wait. Damn I think Ill make some this week just to try it out.

Man, I have not been this excited about my grill since I got it.
 
I'm stuck at home for the next few days while we are getting remodeling done. I went and got a Duck from the duck farm the other day and will try my rotisserie today.

I packed it in rock-salt last night with lemon pepper. I'm going to inject it with ginger, lemon, and basile pured in olive oil.

Any clue as to what temp to use? I want a slow roast to help get rid of as much of the fat as possible.
 
This thread reads "RCNT Anual BBQ" all over it. Too bad we all live so far away. I know I wouldn't hop on an airplane for a BBQ. Then again, if eddy can afford all that hardwood, he should be able to fly RCNT members to his house. :D

You were all Easter with no carpet or floor?
 
No floors all weekend. It was a great excuse to go bashing and visit some friends for dinner.

I didn't have the heart to tell my buddy that his BBQ skills SUCKED.
We all hate having to lie to them about how good it was but we do anyway.:x
O-well, we can't all be as good as us.:banana:
 
I have been thinking that a RCNT weekend bash would be an awesome idea....food, drinks, RC, whatever. Eddy could BBQ and show us his skills. I could drive one of Christians many RC's, heck he could even bring his wife. Pirata could watch us bash cause his stuff would be broken. Mayhem could show us how he drives the brick on a track.
 
El could actually run the grill while eddy and AoDaLiZeD cook. Ummm on second thought....
 
I think half of RCNT lives in Buffalo, NY. (well not really but a lot of guys are up that way)

It would be awsome to see all you guys. I, however, can't see myself traveling very far. I doubt many others feel different.

I wonder if El will ever live down that picture that wasn't even him. The poor guy is getting ribbed over something he didn't do. I still can't help cracking up everytime you guys mention it. funny stuff.

And me cook? HECK NO... I'd be bashing before I'd be cooking.. Though I'd have to bring my webber and show Eddy how a charcoal master works his magic! :)

Poor El.. He never did anything LOL!!!

For you BBQ loving folks out there, the 2 receipes on this thread are killer! I did both of them over the weekend and all I have to say is DAMN!!!!!

Always does. The pork is the best :D

Love it for those cooler spring and fall nights. Nothing beats a nice sparky pork roast to take the chill off. :)

I love the pork roast. Just about as much as I love to RC. Now that's when you know you've found some good food. :)
