Well should be getting one soon and need a brushless system for it. I was thinking maybe the 8000kv or 9400kv would be the best motors but i keep reading the 6800kv is the best. I guess It has more torque and is controllably fast and the others are ungodly fast and uncontrollable?

my other questions are how good is an rc18t off road? and how easy is it to change it to a 18mt? :surrender

can't tell you about the 9400 or the 18T. I have an 18R with the 8000kv CC in it and its a real handfull. Its not bad with the 2s in it but when I hook up the little 3s it is borderline uncontrollable. The 8000 in a T or MT if used what they're designed for is probably a waste.
Of course they are all the same price (I think) so you could get one and then just gear it to do what you want to do. Then when you want to outrun a Top Fueller you still can...

As for the 6800Kv, I have a mamba 25/6800Kv and a 20c 2s LiPo and mine is pushing the limits of being wicked fast yet controllable. I have mine as an RC18T right now, with Proline Wabash wheels and Roadrage tires. It's fast, I have a few videos of it that don't really do it justice if you're interested in seeing the speed.
