I have done a lot of hogs in my days.It fun to get up in the AM and start the roast....
12 hours of BBQ fun!...
How was it? the shoulders are aways the best.
Did he smoke it.
 
He's had the fire going for 2 days (wood).
Had the pig on since yesterday morning.
I forget what kind of wood it was, but yes it was smoked.

LOL..I ment I have cooked a lot of pigs...LMFAO
 
Hey Z, you ever burry them in the ground with hot coals? Our old CO was from Hawaii, he used to do the aloha fridays once a month, sometimes with a roast pig.
 
If you want to get the skin nice and crispy, you should score the skin in 2x2cmm dices. Make sure you break through the skin and get into the fat. Rub it down with course cooking salt, and pour a beer over it once in a while when it's cooking.
