I have a EMBE with the mamba setup. I know the esc is not water PROOF but can it be run in minimal moisture like one inch of snow? I was thinking about building a plastic splashbox around the esc in case it kicked water under the body... Am I crazy?

the tires will kick snow under the body, snow on top of a hot esc is going to melt into water. this isn't going to be good, i would recomend wrapping the esc in plastic or a balloon or something and keeping a close eye on it with a tempature gun for the first few runs. which means removing the plastic and checking the temp. if you don't have a temp gun, just feel it with your hand, if it's too hot to touch, it's too hot.

The esc runs cool during the summer so it should be ok. I dont want to plastidip it cause its still under warranty. Will it damage the fan in the esc by being covered? I'm not looking to run it alot just a little to get rid of the urge:D

Do not run an ESC with any type of balloon or plastic. The vents are there for a reason.

You want to go run in the snow get an ESC that is waterproof, like the Traxxas VXL.
