Mexican Hot Chocolate
This is serious chocolate. This very rich drink is almost a dessert in of itself. It makes the perfect late night drink with cookies as well as a great finish to the meal. Don't skip any steps and throw the eggs right into the chocolate. You will have hot chocolate with scrambled eggs floating in it.
4 ounces unsweetened chocolate
4 cups milk
2 cups heavy cream
3/4 cup sugar
1 1/2 teaspoons cinnamon
2 eggs
3 teaspoons pure vanilla extract
Melt the chocolate in the top of a double boiler. In a separate heavy saucepan heat the milk and cream on low until hot but not bubbling. When the milk mixture is hot add 3 tablespoons of it to the chocolate and mix well. Blend in the rest of the milk mixture, the sugar, and the cinnamon. In a small bowl beat the eggs and vanilla. Add a tablespoon of the chocolate mixture to the eggs and beat well. Slowly stir the egg mixture into the chocolate. Whisk the hot chocolate briskly in the double boiler for 3 minutes, then serve immediately.

My wife and I were checking out Egg Nog recipes. When I told her that Mexican Hot Chocolate had eggs in it, she didn't believe me. That led to a google search and to this nummy recipe. We whipped it up last night and boy was it good. sinful
MY NOTES:
You don't NEED a double boiler to do this. I took a sauce pan and a smaller metal bowl, put some water in the sauce pan, places the metal bowl on top and there you go. Make-shift double boiler.
When you add the milk to the melted unsweetened chocolate, it will "break". That means it will turn into a big, hard, chocolate turd on the end of your wisk. Not to worry though, jusy keep added the warm milk slowly and keep stirring. It will all desolve nicely.
Also, make sure you temper the eggs properly. Just add a little of the hot stuff to the whipped egg mixture while wisking quickly. Keep adding and keep mixing until it's nice and smooth. Then you can toss it into the mix.
And depending on how many you're entertaining, I think 8 servings is a bit much. We cut the recipe in half and it worked out fine.
