I am just wondering why sportworks says to hook the fuel filter to the pressure line and not the line going to the carb?

Take the filter element out of the filter, leaving just the hollow core attached to the pressure line (effectively creating a reservior). Then buy another filter for your fuel line too (leave the filter element in the filter on the fuel line).
