Correct me here: Do I let my engine warm up then do a pinch test and if it takes 3-5 sec to stall it is set right on the LSN? or can I just do a pinch test as soon as it reaches stable rpm when still cold?

I would wait til it is warm. Then, pinch test, it should stall within 3-5 seconds. If it take forever, too rich. If it INSTANTLY shuts off its too lean.

All you do is to pinch the fuel tube right? How far away from the nipple on the carb should you pinch.

I dont think it matters MUCH but if you pinch it next to the tank, you should expect a longer wait than pinching it right next to the carb. You should actually do a high speed run before you test it. That should clean out the carb from any excess fuel from last run or anything like that.
