Usually what I do when I get my kits is plan on at least getting 2. One to build and one to keep for parts. At least that way, I know that I have everything needed for when I break at the track. As the season wears on, I will add doubles or tripples of things that break the most. Things just keep adding up and before I know it, I have everything to keep running at the track. I know it's a bit different for an RTR, such as the T-maxx, REVO, RTR Buggies and others since most of those don't come in kit form. If you go through their parts list that is included with the manual, corresponding part numbers will be there for your referrence. Don't forget to bring the exploded parts sheet for referrence as well.
Here's a list of what should be on the parts list of anyone going to the track whether it's offroad or onroad ...

- Ball ends
- Glow plugs (various heat ranges ... plan accordingly)
- Spare engine (if possible)
- Various tire sombos (various shores for onroad, various treads for offroad)
- Spare batteries and/or rx packs

- Outdrives
- Air filter
- Fuel tubing
Of course, different vehicles will require additional or manufacturer specific parts. For the most part, if the majority of these parts are in your parts box, your day will not end early. As far as the spare engine is concerned, that's not a "must" but if you are having problems with one (air leaks or "pop an engine") you can cut the frustration short and just throw in an engine you know will run. The problematic engine can be taken care of once you return home.
VB has already mentioned items in my list but I was too lazy to double check what was already mentioned. Of course, there are other items that should be with you at the track but that's a different list. Most of those items are common sense (food, drinks, tools, etc ...)
