    Been struggling to recover from having my neck gutted again, but finally felt good enough to drop a speedie backstrap on the smoker (quick bacon grease sear in a hot pan, then 300f smoker for 20 minutes)

    There's a muley butt in there somewhere- along with spuds, carrots, onion, cheese, cheese, and salsa. I just kinda started throwing stuff in hot cast iron to brown, and put it all in the convection oven at 350 for half an hour. Cain't say I'm disappointed ❤️ Brunch is served

    Braised elk shank in a red wine cherry sauce. It's different for sure, but hella good! You get a tang up front with a savory finish.
