Steering issues have nothing to do with the ESC, unless the BEC inside the ESC isn't supplying voltage to the receiver. This is why I told you to check the voltage levels in the receiver with a multimeter, which you still haven't done. It's really hard to try and help someone troubleshoot...
Channel 1 is for the steering servo, Channel 2 is for the ESC. You also have to make sure the plug are plugged in, in the right direction. The negative pin on each channel is toward the outside of the receiver case, positive is in the middle and the signal wire in on the inside edge of the receiver.
Really for what you're going to use it for you could buy any ole voltmeter. If you want a good one, then buy one from Fluke but thats gonna run you $100 minimum.
